James's Story
I’m James, the founder of Meal Prep – Chiang Mai, and food has been my life’s journey.
I grew up on a farm in the UK where we raised pigs and grew our own organic vegetables. My mum was in the kitchen every day, and on weekends my parents cooked together – food, agriculture, nutrition, and an active lifestyle were simply part of my bloodline.
That upbringing gave me a deep respect for fresh ingredients and taught me early on that food is more than just fuel – it’s culture, connection, and health. From there, my journey with food became lifelong. I worked in professional kitchens, went on to own and run my own restaurant in the UK, and eventually moved into building a business here in Chiang Mai.
For me, gut health and nourishment have never been an afterthought; they’ve always sat alongside bold, unforgettable flavour at the centre of everything I cook. I don’t follow shortcuts or trends. I use time as my ingredient – and if it takes me four days to make a dish the way it should be made, then that’s how long it takes. My cooking philosophy has always been about going against the grain of ordinary thinking, blending creativity, tradition, and nutrition into food that fuels both body and soul. My connection to food runs even deeper on a personal level. After suffering a severe head trauma that left me with lifelong tinnitus, I discovered how profoundly diet could influence health and wellbeing. That experience reinforced what I’d always believed: the right food can transform the way we feel, every single day.
Before launching Meal Prep – Chiang Mai, I studied sustainability at university and worked as a specialist in soil regenerative health. That path taught me to respect where food comes from, how it’s grown, and how it impacts not just our bodies but the world we live in.
Today, I bring all of that experience and passion together in one place: nourishing meals, cooked from scratch, designed to make healthy eating effortless and exciting. This is only the beginning.
